Foodie Friday, Sweet-tooth Edition

It’s been a long week, a long month, and a really long school year. I thought that once all of my big things, like Open House, GATE Orientation for prospective students and parents, the BTSA Colloquium for Beginning Teachers, and state testing, were out of the way, I would be better able to regain control of my life. Wrong. The end of the year, once the tests are finished, becomes an endurance challenge. I have to find projects and activities that will keep the little buggers engaged and busy, no easy task with promotion and the trip to Disneyland in sight. So I’m running faster and faster, trying to keep up, and by the end of the week I’m beat.
What does this have to do with Foodie Friday, Lea? I can hear you asking that very valid question. Well, here’s where it’s going. Tomorrow afternoon, some friends are coming over for dinner and Wii and 4 boys under the age of 6 3/4 running around like crazed banshees. They’re good friends and we try to do this every month or so, so it’s very casual. I usually cook because it gives me an excuse to try new things or make stuff that’s too fattening for just us to eat, but this week…well, stick a fork in me, I’m done. I’m already planning on ordering pizza from our favorite little family place and having some adult beverages on hand. I started thinking about dessert though…I don’t think the cookies I self-medicated with last night will make it though till tomorrow in enough quantity, so I started running through my mental rolodex of treats. I thought of the stuff my mom calls cheesecake but is actually a lemon pudding/cream cheese mixture in a graham cracker crust that is incredibly yummy, but I couldn’t find the recipe. (Note to self: add “organize stack of recipes” to summer to-do list) I also couldn’t find the recipe for the vanilla cream I use on puff pastries and top with fresh fruit. So I’m pulling out an old favorite and you guys get to help me give it a name!
Start with a can of Pillsbury crescent rolls. Gently tear them apart and lay them out on a cookie sheet. Spread Nutella on them, sprinkle with pecans and crushed Heath or Skor bars, roll them up like you would a crescent roll, pop them in a 350 degree oven and bake until golden. So easy, so yummy, so bad for you. You used to be able to buy Skor bits in a bag, but I haven’t seen them in awhile. And how can they be bad with Nutella in them?
I’ve made these a bunch of times, but they’ve never had a name. Any suggestions? I’m also open to new, quick, easy, yummy treats…preferably with chocolate or Nutella!

Lea, here is a simple chocolate dessert that does not take much time to prepare. It’s name tells it all. Sometimes I will bake this ahead, cut it into small squares and freeze until I need it. The hard part is not sneaking into the freezer and retrieving one little square at a time.
Delicious Cake (edited version)
2 cups Sugar
2 cups Flour
2 sticks Oleo
4 tablespoons Cocoa
1 cup Water
2 whole Eggs
1 teaspoon Vanilla
1 teaspoon Baking Soda
1/2 cup Buttermilk
Icing:
1 stick Oleo
6 tablespoons Milk
1 cup Nuts
1 box Powdered Sugar
1 teaspoon Vanilla
Cake: Mix first 2 ingredients and set aside. In a sauce pan put 2 sticks of
oleo, cocoa, and water. Bring to a rapid boil then pour into first mixture. Add
eggs, 1 teaspoon vanilla, baking soda and buttermilk. Pour into lightly greased
9×13 inch pan. Bake exactly 20 minutes at 400º.
Icing: Melt 1 stick oleo with milk. When boiling, add 1teaspoon vanilla, nuts
and powdered sugar. Spread over cake.

Mom’s easy cherry cheese cake:
1 Pie shell
-(graham cracker)
8 oz Cream cheese
1/2 c Sour cream
1/3 c Granulated sugar
1/2 t Vanilla (or to taste)
4 oz Whipped cream
14 oz Cherry pie filling
-(1 can)
Instructions
1. Cream together the cheese and sour cream. Fold in sugar gradually. Add vanilla and mix well. Fold in whipped cream. Pour into pie shell and chill for at least 3 hours.
2. Pour excess syrup from the can of cherry pie filling. Leave some, but you certainly don’t need all of it. The sauce should cover the cream cheese mix, but the cherries shouldn’t be drowning in it. Pour pie filling on top. Serve cold.
NOTES:
* A simple cherry cream cheese pie — My wife makes this for me periodically, and it is always delicious. No baking is required, and it is very easy to make. Makes one pie.
* If you don’t have the time to sit around for 3 hours waiting for the pie to chill, make the cream cheese filling the night before and let the pie chill overnight.

Here’s my Blueberry version. The recipe makes two pies and they freeze well–so can make both ahead or just freeze one for the future.
Blueberry refrigerator pie
1 Can Blueberry pie filling
2 Small Cartons Whipping cream
4 Tablespoons Sugar
6 Ounces Cream Cheese
1 Cup Powdered Sugar
2 Tablespoons Vanilla
½ – 1 Cup Chopped nuts (optional)
2 Whole Graham cracker pie crusts
Whip cream, adding sugar. Cream the cream cheese, powdered sugar and vanilla. Fold whipped cream mixture and nuts into the creamed mixture. Pour the filling mixture into the two pie crusts. Top each pie with ½ can blueberry pie filling. Refrigerate the pies 5-6 hours before serving. These pies freeze well.
Yes, food does sound interesting today. Much better for me than obsessing over what is/or isn’t happening in Washington.
for an easy treat, here is my grandma’s recipe for Rice Krispy Squares. Warning, it has forever spoiled me for any other version of rice krispy bars made anywhere else in the world.
40 marshmallows (usual size bag)
1/2 cup butter
3/4 brown sugar, packed
6 to 8-1/2 cups rice krispies
i heat the first three ingredients in a large bowl in the microwave for short amounts of time, stirring frequently, until everything is melted together. While the marshmallows, butter, and brown sugar are melting, i put the rice krispies in a large stockpot, and butter a 9×13 cake pan. Pour the melted glop over the rice krispies, stir, dump into the cake pan and smooth down with a large spoon. Cut, and place in fridge. Before microwaves, gran used to melt the butter, sugar, and marshmallows in a double-boiler. That works too, but the microwave is faster
now, of course, i think anything with copious amounts of butter and brown sugar is good

I’m going to have to look for Nutella. I don’t believe I have ever seen it. Must not be on the barbecue shelf at the grocery store.
This is the chocolate spread I use. Texteen couldn’t have nuts for many years, so we didn’t by nutella.
This is making me hungry. I have a jar of something called cheesecake in a jar downstairs and it just may get opened tonight.

mmm…rice krispie treats with brown sugar…intriguing. Will have to try that one. I make them with dried cranberries and pumpkin seeds (the green one) at Christmas and cut them into gingerbread men.
Sharonlee…look for Nutella near the peanut butters. It’s usually hidden because it’s so good.
Betsy, how does that chocolate spread work on sandwiches? What type? I love chocolate, but haven’t had chocolate sandwiches.
sigh. I think i’m gonna be banned from the Beach House after this confession. I don’t much like chocolate. There! I said it! I was the only kid in my whole grade in grade school who drank white milk instead of chocolate milk.

Ndfg, it’s okay. I don’t like lemon pie or strawberries, myself. The only one in the family who refused to eat those items.
We are pretty forgiving here at the Beach House, so we can hold the chocolate for you (and have more for ourselves).

The crazy thing about Rice Krispy treats is that they are easy to make. It just surprises me to find them on the grocery shelf in a a package. Somehow seems unAmerican.

My daughter made a double batch and sent them to my son-in-law when he was stationed in Bahgdad. Report came back that they were a POWERFUL barter item once he gave his buddies a little sample. But there wasn’t much he wanted to barter for, he kept ‘em under lock ‘n key
I’m off to bed with visions of brown sugar rice krispie treats in my head. Pain-free, uninterrupted sleep for all!
