Foodie Friday-A Lil Somethin’ On The Side!

Last week We Gave Ya Da Boid!
This week it’s all about a couple of side dishes.
Nothing too fancy, just a couple of things I have made up over the years that I like.
I won’t bother with the green beans, yams or sweet potatoes with marshmellows, the lime green jello with hanging fruit bits or anything else from the 1960’s.
And no fruit cake, either. You KNOW yer neighbors or them pesky relatives you only see once a year are gonna unload a few on you anyways. 
Nope, it’s just a nice Roasted Garlic Rosemary Mashed Celery Root, a Sausage/Apple/Cranberry Stuffing and a Cranberry Sauce With Orange.
So let’s get to it!
Now, this is NOT my recipe, but it IS Celery Root Mashed Spuds, and it’s a pretty picture! Check out the recipe, clicky piccy!
Larue’s Roasted Garlic With Rosemary Mashed Celery Root
- Ingredients
- 3 lbs. peeled celery root diced into half inch to one inch cubes
- half cup roasted garlic
- one sweet Vidalia onion, roughly chopped
- two 6 inch long rosemary branches
- one 6 inch rosemary branch stripped and finely diced or processed
- 1/4 stick non salted butter sliced about half inch thick
- half cup heavy cream
- 1/2 cup grated Parm/Reg or Asiago Italian Cheese
- S&P to taste
- Peel and cut celery root the night before and cover in milk
- Remove from ‘frig next day and bring to room temp
- Reserve milk
- Layer cookie sheet with tin foil (clean pan!!)
- Take enough peeled garlic to fill cookie sheet (you’ll use more for other recipes)
- Hint: Buy jars of peeled garlic!!
- Toss garlic in bowl with small bit of EVOO, S&P
- Spread out on cookie sheet and roast at 450F for 30 minutes or so
- Check at 20 minutes, look for light brown carmelized surface
- When done, take to food processor and drizzle small amount of EVOO until paste is formed
Initial Prep
While garlic is roasting:
- In sauce pot drizzle small amount of EVOO, bring heat to high
- When hot but not smoking, pour in celery root cubes and chopped onion
- Add two branches of rosemary (6″)
- Lower heat to medium, stir and saute for 10 minutes
- Add half of the milk and half chicken stock to cover solids
- Simmer for one hour, lid on, checking at intervals to ensure liquid does not ALL boil away
- Strain out solids into mixing bowl, save rosemary branches for later
- Add half cup roasted garlic
- Add fine diced rosemary
- Add half of sliced butter stick
- Begin to puree with hand held blender
- Add rest of butter and heavy cream as you go
- When done to desired puree, cover and store in 175F oven to heat it up
- When ready to serve uncover and add grated cheese to top and brown
For the more adventurous take mashed celery root to pastry bag and pipe onto individual serving plates, top with cheese and brown under broiler!
Larue’s Sausage, Apple, Cranberry Walnut Stuffing
Ingredients
- two pounds of loose ground sausage of choice (I like seasoned Italian Sausage)
- 4 diced green apples (half inch chunks)
- 1/4 lb roasted walnuts
- 2 cups diced (one inch cubes) pumpernickel loaf bread that’s been toasted in oven after dicing
- 1/2 lb of fresh whole cranberries
- 1 chopped portabella mushroom
- 1/4 cup chicken stock
- 1/4 cup apple cider
- 1/4 cup roasted garlic
- 1 tablespoon non salted butter
- 2 whole eggs
- diced rosemary from branches in recipe above (it’s been soaked, easy to fine dice!)
Process
- In cast iron pot with high heat add 2 tablespoons EVOO
- Add sausage and brown
- Add onion till translucent
- Add chopped portabella mushrooms
- Add apples
- Add cranberries
- Add cubed/toasted bread
- Add roasted garlic
- Add rosemary
- Add butter
- Stir for 5 minutes until all ingredients are incorporated
- Add apple cider and chicken stock and cook 5 minutes more
- Remove from heat
- Beat eggs, and add eggs and walnuts and stir
- When fully incorporated cover with foil and bake for 20 minutes at 375F
- Check to see if liquids have all be absorbed and stuffing is solid
- In needed, uncover and cook till done
- Spoon out and serve when needed
Larue’s Cranberry Orange Sauce
Ingredients
- Two pounds fresh cranberries
- One cup water
- One cup triple sec
- Juice one large naval orange
- Zest on large naval orange
- Half cup white table sugar
Process
- Add all ingredients to sauce pan
- Bring to boil
- Simmer for half hour
- Check to see if thick enough and cranberries are done
- If not, simmer longer
- Use immersion blender if you want a creamier sauce
- Or leave as is for a more rougher texture
- Serve hot or cold
Well, that’s about it for today!
Da Boid’s done, side dishes are ready for service, and I hope by now you’ve had a couple of glasses of your fav vino to temper the insanity of the neighbors and relatives milling about and getting in your way! Not to mention the dogs, cats and any OTHER animals lurking and adding to the chaos!
Until Thanksgiving though, get out in your kitchen and make something to eat!

Mr. Gnome is already in bed. He wore himself out working in Houston all week.
This is a commercial for a guy named James Perry who is running for Mayor of NOLA. I have never heard of this guy until I saw this commercial earlier tonight after the local news. It got my attention, and once you see it I think you’ll see why.
I forgot to say Larue that all your recipes tonight look delish. However, I need a sweet potato recipe that does not involve marshmallows. I may use the one Sharonlee posted the other night.

Alas, I am about the only person in my family who likes turkey. And this year it’s just me and my dad, so even an anorexic turkey would be too much. Hmmm… Is the nether opening of a duck big enough to make beer can duck?

ooh, good timing! Just catching up on everything. LeaHubby is doing better. The obstruction has partially cleared and he’s tolerating liquids now. They’ll try soft foods tomorrow and xray again to check the obstruction. Now he’s just really bored and grumpy. The little guy is alternating between crying for daddy and playing with his mini-monster trucks. Thanks for asking!

I guess it just surprised me, is all. It was on after the local news about 6:30 p.m. It’s painfully clear that the people were saying the words, rather than saying something similar knowing they’d be bleeped out. Given that he mentions he was an altar boy, the ad might end up biting him on the butt. I think it’s a great ad, in that it is different and grabs your attention.
Yay for LeaHubby! Is it going to be like after having a baby-they won’t let him go home until he goes poo?
I had to go get the little guy from his sleepover at step-monster’s tonight. She called me a little after 8, saying they’d had baths and were jammied up, and he told her it was time for him to go home and she should call him mommy to come get him. She called, and put me on the phone with him. He didn’t seem upset, just adamant. I still don’t know exactly what the problem was, but I think it’s because we are leaving to go to mom’s in the morning and he was thinking that somehow we’d forget to take him along. He is a creature of habit, and this is out of our usual travel scenario.

Here’s a recipe that doesn’t take an entire turkey. Again from Food Network’s Big Daddy’s House.
Turkey and Stuffing Egg Rolls

Serves:
12 servings
Ingredients
* 1 pound roasted turkey breast, skin removed and cut into small cubes
* Jazzed Up Stuffing, recipe follows
* 1 egg, beaten
* 1 tablespoon water
* 12 egg roll wrappers
* Gravy, for dipping, recipe follows
* Cranberry Dipping Sauce, for dipping, recipe follows
Directions
Preheat a deep-fryer to 375 degrees F.
In a large bowl add the turkey and the stuffing and mix to combine. In a small bowl, beat the egg with water to form an egg wash. Layout the egg roll wrappers and spoon 2 tablespoons of the turkey mixture onto each wrapper. Brush the edges of the wrappers with egg wash. Roll tightly, being sure to bring the sides together so the egg roll is tight. Before the final wrap, use some egg wash to seal. Set the finished egg rolls on a platter until ready to fry.
Fry the egg rolls, in batches, until golden brown and crispy, about 1 to 2 minutes. Remove the egg rolls to paper towels to drain. Allow to cool and arrange on a serving platter. Serve with warm Gravy and Cranberry Dipping Sauce.
Jazzed Up Stuffing:
* About 1 cup chicken stock
* 1 box prepared stuffing
* 1 tablespoon freshly chopped thyme leaves
* 1 tablespoon freshly chopped rosemary leaves
* 1 tablespoon freshly chopped sage leaves
In a large saucepan add the chicken stock and bring to a simmer over low heat. Remove from the heat and stir in the stuffing and the fresh herbs. Mix well.
Gravy:
* 3 tablespoons butter
* 1/4 cup finely diced onion
* 3 tablespoons all-purpose flour
* Pinch freshly cracked black pepper
* 1 tablespoon freshly chopped rosemary leaves
* 1 tablespoon freshly chopped parsley leaves
* 1 1/2 to 2 cups turkey stock
* Pinch salt
In a medium saucepan heat the butter over medium-high heat. Add the onion and saute until translucent. Reduce the heat and stir in the flour and pepper to make a roux. Add the herbs, turkey stock and salt. Simmer over low heat until the mixture thickens.
Cranberry Dipping Sauce:
* 2 cups frozen cranberries
* 1 cup frozen strawberries
* 1/2 cup sugar
* 1/4 cup orange juice
* Pinch cayenne pepper
In a medium saucepan, add the cranberries, strawberries, sugar and orange juice. Bring to a slight simmer over low heat. Cook until the cranberries pop, about 6 to 8 minutes. Add the cayenne pepper and simmer for an additional 4 to 5 minutes. Remove from the heat and allow to cool. Add to a blender and puree the sauce until velvety and smooth. Transfer to a serving bowl.
This looked really good and I have added it to my recipe files.
and he was using Tempura fried string beans as a side.
Tempura Fried String Beans

4 to 6 servings
Ingredients
* 1 cup all-purpose flour
* 1 cup cornstarch
* 1 tablespoon baking powder
* 1 tablespoon sugar
* Pinch salt
* 1 cup soda water
* 1 pound string beans, washed, dried and trimmed
* 1/2 cup cranberry sauce
Directions
Preheat oil in deep-fryer to 375 degrees F.
In a large bowl add the flour, cornstarch, baking powder, sugar and salt and mix to combine. Whisk in the soda water and mix until a batter is formed. Dip the beans in the batter being sure to shake off the excess. Fry the beans in batches for 2 to 3 minutes until crispy and golden. Remove to a paper towel lined sheet tray to drain. Arrange the beans on a platter and serve with warm cranberry sauce.
Cook’s Note: When frying the beans, make sure the fryer basket is submerged into the oil. Drop string beans into the basket in the oil to ensure the beans do not stick to the basket when cooking.

I’m all for him staying…he’s the one that wants to leave. He didn’t want to be admitted, but I told him he wasn’t leaving with me, so he might as well stay hooked up to the pain meds and let the professionals take care of him. Still sucks though.

hiya beach bumz. I am in Virginia and sharing a hotel room with host grandma. She snores and I’m having trouble sleeping. The heater is really loud and there are a million lights outside.

Hey there NAFG – You did get not to work after all it seems!
Been there done that. But I can’t not have kitties and doggies, so I just have to cope and keep taking in the strays! Clooney was one of four really tiny kittens abandoned on my friends property. We grew them, socialized them, found homes for them all.

I’m back stage. Just came out, and remembered to freshen up – but it is also likely that you both are gone to bed.

Morning bumz! The little guy woke me at 6:15 this morning, and announced that it was time to get up and go to Granny’s! He admitted that the reason he wanted to come home last night ws so I wouldn’t forget to take him with us. As if I could forget him
He dragged the big suitcase from our bedroom already, then showed me how big his muscles are. I can barely pick it up, so he’s pretty strong, I guess!
Pellora-I was right! I knew it wasn’t Rosemary Clooney
George is so smoking hot…yum!!! And the cat is very pretty as well, I love the big floofy tail. Mal has a skinny tail, which he manages to stick in my face at every opprotunity.
Cassie-get yourself to a drugstore and get some earplugs. They’re cheap and comfortable, and make all the difference when sharing a room with a loud sleeper. They’ll probably come in handy when you get to college, too!
I’ll check in once we get to Granny’s
